Woodchoppers BBQ Smoke & Grill beef ribs are unique because we cook them “low & slow” on our wood fired BBQ for upto 6 hours at just 220F. This creates that unique red smoke ring which is a signature of real great BBQ. Unlike many others, our beef ribs are never boiled or steamed nor do they see the inside of a pressure cooker.

Is BBQ Tri Tip the best cut of meat on a wood fired BBQ ?

We reckon that BBQ Tri Tip is the No 1 & thousands of folks in the US, Canada & Brazil seem to agree !

What is Tri Tip Sirloin I here you ask over the digital highway ?

It is the bottom “triangle” part of the Sirloin which butts up against the rump steak. Its unique position gives the Tri Tip the soft textures of the Sirloin while imparting the flavours of the Rump.

This is shown by the image of our friendly cow below from the TriTip Guy.

Its size and shape make it the perfect BBQ meat. When cooked low & slow for 4 – 6 hours over flavorsome Hickory wood, just melt in the mouth BBQ bliss.

Sounds too good to be true, well here’s the catch.

  • As this is a small cut of meat, tucked away at the rear of the cow, very few butchers use the Tri Tip.
  • Furthermore with quality Australian meat in high demand overseas, 95% of all our Australian Tri Tip is exported to the US or Brazil !

What does this all mean – Tri Tip is hard to get.

In fact it took us 4 months to find a supplier we could get guaranteed stock!

So when we do get it, we must treat it with respect.

Our BBQ Barbi Parmi, like all great inventions, came out of necessity for all you Parmi lovers.

In 2016, Woodchoppers classic Parmi was in the top 10 on the Gold Coast. We were proud of our Parmi.

When we started our BBQ Smoke & Grill in April 2017, we wanted to keep the Parmi dream alive.

But how do you do a deep fried Parmi when you are a BBQ house ?

Simple, you don’t deep fry your chicken breast but cook it low & slow for 3+ hours.

To complete the Barbi Parmi we add slow cooked pulled pork and fresh tomato salsa.

To test our new Parmi we welcomed 100 plus hungry guests on Fathers Day 2017. The Barbi Parmi was on the specials menu for the first time.

We source all our wood supplies through sustainably managed forest systems so there will be enough quality Oak for our grandkids to BBQ on.

At Woodchoppers BBQ SMOKE & GRILL, we use a Yoder 640 Offset Pellet Smoker.

Although it might look like a Big Black Home Style BBQ, the Yoder is more akin to a Convection Over !

How you might say………….

As the diagram right shows, the wood is burnt in the firebox to the left and beneath the BBQ. The hot air then travels up and around the chamber being drawn by towards the chimney at the right. This process occurs due to the heat and pressure inside the chamber being lower than that on the outside. A set of metal “baffles” below the chamber are moved in and out to control the airflow and heat distribution to achieve a perfect airflow mix. If we could see the airflow in the chamber, it would ideally be swirling in a vortex manner around our BBQ creating an even constant cooking process.

However this is not necessarily the case. Over the past few months we have learnt that our Yoder has its hot and not so hot spots, and that BBQ is more art than science. We constantly monitor the Chamber, moving meats to the right “zone” depending on thickness and fat coverage to get the right mix of smoke, heat and that great BBQ flavour.

So in reality, BBQ and Smoking on a Yoder is just like cooking in your convection oven at home but with a constant fire burning, a set of metal baffles to move to set airflow, chimney to regulate airflow and about 4 zones of differing heat intensity to keep you on your toes.

That’s why BBQ is not just a business is must be your passion !
