Offset BBQing 101
At Talking BBQ, a common question we get from our guests is
“how do you get that incredible pink smoke ring in all your BBQ”
The simple answer is time and patience with our Yoder BBQ set to low & slow for anywhere up 20 plus hours. Along with time is the power of the smoke, gently penetrating the meat as it swirls in a convection motion around the cooking chamber.
The heat is created in the firebox and is drawn through the chamber by the low pressure created as the heat is released through the smoke stack. This in turn creates multiple heat zones, which complicates the cooking process, with the need to rotate meats to ensure an even cook through out. To the left is the hot zone and to the right the warm zone – see our diagram.
Rather than searing or drying out the meat, the offset BBQ gently cooks the meat, maintain moisture while imparting a succulent BBQ flavour. So long as you are keeping obsessed with rotating your meat !

Oysters Rockefeller
At Woodchoppers we have been serving Oysters Rockefeller for the last 20 years.
The key to a great Rockefeller are the following:
- Great Oysters – we only serve them when we think they are at their best
- A “volute” mix to protect the Oyster when we bake them
- A traditional Rockefeller recipe dating back to 1859
- Value for money Oysters – not “broadbeach” prices
